Chicken Enchilada Ingredients
A traditional Mexican dish, chicken enchiladas are made from simply prepared ingredients found in most grocery stores. They are most often eaten hot with guacamole and refried beans.
Chicken
Use cooked chicken only, not raw. Meat from boneless chicken breast halves that has been cooked and diced works well.
Corn Tortillas
The size of the tortillas is up to you. The larger the tortilla, the more filling it can hold. Seven-inch tortillas are standard.
Vegetables and Herbs
Recipes vary, but typically call for fresh green onions, green chilies, onions and cilantro.
Chicken Broth or Canned Enchilada Sauce
The broth is mixed with flour, butter and sour cream to make its own sauce, however, prepared enchilada sauce can be purchased in jars or cans.
Shredded Cheddar Cheese
Some of the cheese is rolled with the chicken and vegetables in the corn tortillas. The rest is sprinkled on top of the dish during the last few minutes of baking time.
