Cook Sweet Rice

Sweet rice is the sticky rice used for sushi.


Sweet rice is also known as glutinous rice, sticky rice and sushi rice. It is a sticky, short-grain rice that is either white or black and widely used in Asian cuisine. In 2005, Chinese researchers with Xi'an Preservation and Restoration Center of Cultural Relics tested the mortar used in ancient city walls and found that is was made from glutinous rice porridge. The mortar was so strong that archeologists had difficulty in removing bricks from the over 2,000-year-old wall. You made not need to prepare your sticky rice to construct a wall, but you can easily cook sweet rice for your next Asian meal.


Instructions








1. Soak your sweet rice for four hours or overnight in a medium saucepan with enough water so that it is completely immersed. Be sure to cover your pot. The longer the rice is soaked the more chewy the texture will be.


2. Drain your soaked rice with a fine colander. Add it back to your saucepan and add 1 to 1/2 cups of water. Place the saucepan on the stove at medium-high heat to bring to a boil.


3. Cook your sweet rice for 10 minutes, with the lid at an angle to let the steam out. Check the water level in the pot. If there is still water left, cook for an additional five to seven minutes. Once the water is gone, the rice should be cooked and translucent.








4. Place your soaked rice in a rice cooker, as an alternative to a saucepan on the stove. Add enough water to level "1" in the pot. This denotes the amount of water needed to cook 1 cup of rice.


5. Turn on your rice cooker. Once the cooker turns itself off, your sweet rice should be cooked.
