Make Tahini Sauce

Tahini paste is a popular Middle Eastern food made from sesame seeds that can be enjoyed as is a dip or spread, or mixed with other ingredients to make salad dressings, season stews, soups or casseroles or to make toppings for burgers, falafel and more. With a few simple ingredients, and tahini of course, you make a delicious sauce in seconds.

Instructions

1. Make tahini sauce with a food processor, blender or mortar and pestle to create a smooth and creamy consistency.

2. Combine 1/2 cup of tahini paste, 2 to 4 large fresh garlic cloves, 1 tbsp. of olive oil, a pinch of fresh parsley, salt and pepper and process, blend or crush until smooth.

3. Add equal parts of water, apple cider vinegar and fresh squeezed lemon juice slowly to the mix as you combine the ingredients. Use as much liquid as you like for taste and texture. If you prefer a creamier tahini sauce, add a tbsp. or two of either buttermilk or natural yogurt.

4. Adjust any of the ingredients you desire to perfect the flavor and make the tahini sauce your own. Store the sauce in an airtight container in the refrigerator for up to two weeks, serving on salads, sandwiches, as a dip or even as a marinade for poultry or fish.
