Make a Broccoli Salad


Broccoli salad makes a nice accompaniment to grilled or barbecued dishes, and is also a traditional potluck or picnic dish. Most commonly, broccoli salad consists of broccoli florets combined with various other vegetables, nuts, fruit, bacon and a creamy dressing. This recipe yields approximately six servings of broccoli salad, but the recipe may be doubled if necessary.


Instructions


1. Combine the mayonnaise, granulated sugar and white wine vinegar in a small mixing bowl. Cover the bowl with plastic wrap and place in the refrigerator. Allow the mixture to chill for 4 to 8 hours.


2. Fry the bacon in a medium-size skillet for about 4 to 5 minutes on each side, or until crisp. Remove from the pan and place on paper towels to drain, allow it to cool completely, and crumble into a large mixing bowl.


3. Chop the broccoli into bite-size florets, and discard the stems. Chop the red onion as finely as possible, and chop the green and white parts of the scallions into small pieces.








4. Add the vegetables to the mixing bowl with the bacon, and add the raisins and sunflower seeds. Pour the mayonnaise mixture over the salad. Mix well to combine, making sure all of the ingredients are thoroughly and equally coated.
