Bake Salmon Cakes

Baked salmon cakes make for an inexpensive, delicious main dish for lunch or dinner. Since nutritionists advise that people take in at least two servings of fish per week to reap the heart-healthy benefits of omega-3 fatty acids, this salmon variation is not only tasty but nutritious. For a simple baked salmon cake recipe, look no further than the steps below.


Instructions


1. Cover a baking sheet or pan with cooking spray and preheat the oven to approximately 450-degrees Fahrenheit.


2. In a large skillet, heat 1½ tsp. olive oil on medium-high heat. Toss in the celery and onion and sauté for about 3 minutes, stirring occasionally. Sprinkle in the parsley and remove the pan from heat.


3. Put the salmon in a mixing bowl and extract any skin or bones. Mix in the egg and mustard and stir together well. Then add the sautéed onions and celery, breadcrumbs and pepper.


4. Mold the mixture into seven or eight small salmon patties.


5. Add another 1½ tsp. olive oil to the skillet, and warm over medium heat. Place half the patties in the pan, grilling until the bottom side begins to brown, about 3 minutes. Using a spatula, remove each patty and place it on the baking sheet. Repeat this step for the remaining cakes.


6. Bake all the salmon patties for about 15 to 20 minutes, or until they are heated through and golden.


7. Carefully remove from the oven and serve.
