Breakfast Brunch Ideas With Meat

Brunch is a combination of breakfast and lunch and this hybrid meal is often served on Sundays, holidays or special occasions. When you are serving a main dish featuring meat, be sure to include side dishes such as fresh fruit or pastries to properly round out the meal.


Breakfast Sandwiches


Recreate fast food breakfast sandwiches with English muffins, eggs, cheese and ham, bacon or sausage patties. Cook the meat on a large griddle and then cover it to keep it warm. Place the English muffins on the grill, cut sides facing down to toast them while you cook eggs for the sandwich. You will probably want to pierce the yolk of each egg as liquid yolks will make eating the sandwiches rather messy. When everything has cooked, stack the eggs, meat and a slice of cheese inside each English muffin.


Brunch Casserole


The great thing about a brunch casserole is that it can be prepared the night before and then simply popped into the oven in the morning. If you have never made a brunch casserole before, start with a greased 9-inch by 13-inch casserole dish. Cover the bottom of the dish with approximately 4 cups of frozen hash brown potatoes. Add 1 pound of cooked bacon and chopped, sauteed onions and mushrooms. Beat four eggs with 1 1/2 cups of milk and pour the mixture over the bacon and potatoes. Top with 1 cup of shredded cheddar cheese and refrigerate the casserole overnight. Bake the casserole the next morning at 400 degrees F for approximately one hour.


Quiche








A quiche is similar to a baked omelet prepared in a pie crust. Refrigerated pie crust will make the dish much quicker to prepare. You can use any kind of meat such as sausage, ham or even chicken but it does need to be cooked before you place it in the pie crust. You can cook the meat in a skillet along with chopped onions, garlic or any other vegetables you like. One popular combination is to cook 8 oz. of ground sausage with chopped onions in a large skillet and then add one 10 oz. package of frozen chopped spinach and cook until the spinach is heated through. Pour the mixture into your pie crust and top it with approximately four eggs mixed with 1 cup of cream or milk. You can also add up to 2 cups of the shredded cheese to the eggs if you desire. Bake the quiche in a 350-degree oven for approximately 45 minutes to one hour or until the eggs have completely set.
