Thai Hot Sauces

The key ingredient in nearly all Thai hot sauces is red and green Thai chillies. These chillies are inexpensive to buy and are easy to grow in most climates. Most recipes ask for fresh peppers, but dried and even powdered peppers can be used as a substitute. A variety of different onions and garlic are also commonly used in hot sauces.

Thai Chilles

Thai chillies, also called bird's eye chillies, are long and thin compared to the short fat jalapenos of Mexico. The green and red chillies are actually the same thing. They grow green and then become red if left on the vine to ripen. Although they are used heavily in Thai cooking, it is believed that they made their way to Thailand from South America. Thai chillies will grow anywhere that they can get a lot of sun and are reasonably drought resistant.

Hot Sauce

Thai hot sauces can frequently be purchased in grocery stores but are not difficult to make at home. Aside from the chillies, recipes generally call for simple ingredients. Onions, garlic, coriander, shallots, and oils, such as fish or vegetable oil, are common ingredients.
