Make An Avocado And Tomato Salad

Combine avocados and tomatoes for a fresh salad.








If you have never experienced an avocado and tomato salad, then you are missing one of the best-tasting combinations that nature has given us. Complete the garden-fresh flavors with the zing of a vinaigrette and feta cheese. Dried cranberries add texture and tang. You could also sprinkle in walnuts for a little crunch.


Instructions








1. Rinse the tomatoes under warm running water. Cut the avocado in half lengthwise and remove the pit. Use a spoon to scrape the avocado out of the peel and then slice it into sections.


2. Cut the tomatoes in half and then slice the halves into half-inch pieces. Add the tomatoes and avocado to a salad bowl.


3. Measure in about 1/8 cup of dried cranberries per avocado. Add a little dill weed and some parsley. Pour on raspberry vinaigrette and lightly toss the ingredients.


4. Top with feta or Parmesan cheese. Chill for about half an hour and then serve.
