Make Pineapple Sangria
Pineapple sangria is the perfect summer beverage for just about any occasion, and very easy to make. In this simple sangria recipe, the pineapple flavor comes from pineapple-flavored rum, though you can certainly boost the pineapple quotient by adding pineapple chunks or juice to taste. For best results, you'll need to chill the beverages for an hour, plus let the sangria sit for at least two hours to develop the flavor, so plan ahead.
Instructions
1. Select three pieces of firm, ripe citrus fruit. Lemons, limes and oranges add great, bright flavors to this sangria, but you can mix it up to suit your tastes. Place the fruit, pineapple rum, Lambrusco and orange juice in the refrigerator and chill for at least an hour.
2. Once the citrus fruit is chilled, slice each piece into thin rounds (about 1/8 inch thick) and place them in a glass pitcher. Sprinkle the fruit with 1/4 cup sugar and carefully pour in 1 1/2 cups chilled pineapple rum. Stir the mixture gently and refrigerate for at least two hours.
3. After the fruit has steeped in the rum, crush it gently with the wooden spoon. This will release the flavors. Pour a bottle of Lambrusco and 1 cup orange juice into the pitcher and stir. Serve straight-up, or over ice for a lighter drink.
