3. Turn the heat down to medium-low. Add the onion, potato and garlic clove. Saute these vegetables until they caramelize.
4. Add the ground cumin, coriander seed, black pepper, red pepper flakes and salt to the vegetables.
5. Stir the roasting chicken back into the pan. Add 1 cup of water to the pan. Replace the lid and simmer the stew for 10 to 15 minutes.
6. Remove the lid and add the peanut butter and garbanzo beans. Replace the lid and simmer for an additional 10 minutes. The stew is finished cooking once the potatoes are tender and the chicken is cooked.
