Eat Raw Fish

Sushi is a common dish prepared with raw fish.


Raw fish is considered a delicacy to many people. Eating raw fish, whether combined with other ingredients to make sushi or sliced raw on top of salad, can be a culinary delight when done properly. The proper way to eat raw fish requires you to know what to look for when choosing raw fish and what to avoid. Eating raw fish that was not stored properly or verified for freshness can cause you to become ill. The best way to avoid getting sick is to check and double check the fish prior to eating it raw.


Instructions


1. Get the freshest fish possible. if you have access, purchase fish directly at a dock where fishing boats have just returned. You can also purchase fish directly from a fish market. Smell the fresh fish. Do not purchase fish with a strong fish smell. The freshest fish which are used for eating raw have no smell except for a faint hint of the sea.


2. Have the fish gutted immediately after purchasing. Purchase the fish and have it cleaned at a reputable fish market. It is imperative that the entire digestive tract of the fish be properly and thoroughly removed. Know that any potential parasites living in the fish reside in the digestive tract. Using the services provided at fish markets for cleaning fish will help ensure the fish is cleaned properly so that you can consume the fish raw.


3. Place the gutted fish in the freezer for seven days. This will keep the fish fresh and kill any lingering parasites which may be in the fish. Defrost the fish by allowing the fish to come up in temperature in the refrigerator. Do not allow the fish to defrost on a counter top. Once the fish has defrosted, smell the fish again to make sure it has not gone rancid.








4. Slice the fish into paper-thin strips. Hold the fish slices in your hand, up to a light, to visually inspect the fish. Look for small coiled worms or other parasites which resemble grains of uncooked rice. While inspecting the fish know that for the fish to be safe to eat you should not see anything in the meat of the fish except for the normal striations of the meat.


5. Prepare sushi or simply place strips of raw fish in bread, salad or other items. Make sure to eat the fish immediately. Do not save leftover raw fish. Cook off leftover fish immediately so the rest does not go to waste.
