Chicken Appetizer Ideas

Appetizers with chicken are a savory way to start off a meal.


Meaty appetizers do not have to weigh you down or leave you too full for the main meal. Chicken appetizers appeal to the need for a savory start to dinner without being as filling as fattier meats. Think beyond chips and dip and make your chicken appetizers memorable.


Quesadillas


Think of quesadillas as grilled cheese sandwiches on a tortilla.








Quesadillas are not difficult to prepare, especially when you consider that they are a South-of-the-Border version of a grilled cheese sandwich. Adding shredded or chopped cooked chicken to a cheddar-cheese-filled flour tortilla enhances the flavor of the tortilla sandwich. To make a quesadilla, spread an even layer of salsa or refried beans over a large flour tortilla. Sprinkle shredded cheddar cheese over the salsa and scatter shredded cooked chicken over the cheese. Top the bottom tortilla with a second flour tortilla. Toast the quesadillas in a skillet for one minute on both sides or until lightly golden and warm. Cut the quesadilla into wedges for serving with sour cream, guacamole and salsa.


Chicken Strips


You do not need to visit a restaurant to serve chicken strips for an appetizer.


Skip the drive-through restaurant and make your own chicken strips at home in the oven. Coat chicken breast tenders with beaten egg and roll the tenders in crushed corn flake cereal. Bake the chicken in the oven at 475 degrees Fahrenheit for 10 to 15 minutes or until they turn golden brown and the chicken has cooked through. Serve the homemade chicken strips with barbecue sauce or honey mustard dressing.


Chicken Satay


Satay is a skewered grilled snack from Thailand that consists of marinated cubes of chicken breast served with a peanut-flavored satay sauce. This sauce is available in some Asian supermarkets, but there are recipes on the Internet to make your own at home. Remove the chicken after two hours from the marinade and thread the chicken cuts on skewers. Grill the skewers on both sides until the chicken has cooked through. Serve the skewers with fresh satay sauce for dipping.


Chicken Salad Sandwich Bites


Purchase or prepare your favorite recipe for chicken salad. Opt for a recipe with finely chopped pieces of chicken and vegetables to prevent large chunks of chicken from falling out of the sandwiches when they are eaten. Spread the chicken salad between two pieces of cocktail toasts, crackers or a split dinner roll. Secure each sandwich bite with a toothpick and serve. Alternately, spread the salad between two slices of sandwich bread and cut the larger sandwich into four squares or long strips for finger sandwiches.
