Canning your own vegetable broth is an economical and healthy concept. When you have your own canned vegetable broth, you can then take out a jar and enjoy it all year long. You'll need a pressure cooker and pint- or quart-sized jars before you are ready to begin canning your favorite vegetable broth. Below are steps that you can take to can your own vegetable broth.


Instructions


1. Prepare a large batch of your favorite vegetable broth recipe. Refrain from adding any pasta, rice, flour, milk, cream or other thickening agents to your broth. These ingredient can be added after being stored.


2. Fill the large pot with water, and bring to a boil. Place canning jars into the water for two minutes.


3. Remove the jars from the boiling water and let them air dry. The jars are now sterilized, so do not dry with a towel or any object that may contaminate their interiors.


4. Fill the jars with the prepared vegetable broth leaving 1 inch of room at the top. Place lids on securely.


5. Process the jars in either a dial-gauge or weight-gauge pressure cooker. Follow your specific machine's directions for precise preparing times. Usually pints should remain in the cooker for 60 minutes, while quarts for 75 minutes. The reason for this is because clostridium botulinum, the bacterium commonly found in vegetables and meats, grows in moist, low-acid, oxygen-free environments, like sealed cans.
