Banana and chocolate, the combination tempts even the most jaded taste buds. Enjoy several of these reduced fat mini-muffins; the effect on your waistline will be small, but the effect on your taste buds will keep you smiling all day.
Instructions
1. Preheat oven to 350 degrees Fahrenheit. Generously coat mini-muffin pan with cooking spray.
2. Sift flour, sugar and baking soda in large bowl. Set aside.
3. Melt the butter in microwave using a microwave safe bowl. Butter will melt in less than a minute in most microwaves.
4. Mash the bananas in a clean bowl with a whisk. Mix melted butter, egg and buttermilk with the mashed banana.
5. Combine flour mixture with the banana mixture. Stir batter gently, stopping when the flour has been incorporated into the banana mixture. Stir in the chocolate chips.
6. Fill the muffin pan with batter. Batter should almost reach the top of each mini muffin holder.
7. Bake for 19-22 minutes. Check mini-muffins with a toothpick. The tooth pick should come out cleanly when the muffins are done. Empty muffins onto cooling rack immediately.
