Make Chicken And Gnocchi Dumplings

Gnocchi are easy to make in this recipe


This recipe is an Italian style dish with homemade Potato Gnocchi. Gnocchi are small dumplings typically made from potatoes and flour. Each serving is full of Vitamin A and C, antioxidants, Iron, protein and fiber. It's guaranteed to keep your family satisfied, healthy and full.


Instructions








1. Boil potatoes in large pot of salted water until tender, about 15 min. Drain and press through potato ricer or coarse sieve into medium bowl. Let cool 10 min. Add egg, ½ tsp salt, and baking powder. Stir. Add flour to form soft dough.








2. Transfer to floured surface. Roll into 1-inch balls.


3. Saut oil, onion, celery, carrots in skillet, one minute. Add broth, thyme, pepper, and remaining ¼ tsp salt. Simmer 10 minutes.


4. Add chicken to simmering broth. Return to a simmer, cover, and cook 10 minutes. Add dumplings and simmer one minute longer. Whisk sour cream, sherry and cornstarch in small bowl. Add to broth along with peas. Cook over medium-low heat until thickened. Stir in chives and lemon juice. Season to taste with salt and pepper.
