Make Sourdough Pancakes

Sourdough's distinctive flavor comes from the fermentation of wild yeast in the dough. Sourdough is often used in bread, but it is found in other edibles as well. A hearty breakfast of sourdough pancakes and bacon will bring any winter morning to life.


Instructions


1. Place one cup of sourdough starter in a glass mixing bowl. Allow the starter to reach room temperature. Add 2 tbsp. of cooking oil and stir the mixture well.








2. Beat one egg and stir into the starter. Add two tbsp. of sugar and stir thoroughly. Add 3/4 cup of flour to the batter and stir.


3. Mix in one tsp. of soda, 1/4 tsp. of salt and a small amount of water or milk. Quickly stir the batter until there are no lumps and set aside to rest. At this point, the batter will start to foam and rise. This is the action of the wild yeast.


4. Heat a griddle to medium high heat and coat with nonstick cooking spray. Stir and then pour the batter onto the griddle, flipping when they have browned. When the cakes are finished, spread a small amount of butter on the top of each one and serve.
