Boil Oysters In The Shell

Boiling an oyster is but one of a dozen ways they can be served.

Oysters have long been considered the aphrodisiac of the sea. Oysters can be served in a wide variety of ways. Most often served raw on the half-shell, oysters can also be served deep fried, baked, steamed and roasted. Oysters can be served on a cracker sprinkled with lemon juice and hot sauce, a traditional southern style. Boiling the oysters in their shells will help kill the bacteria that can live in oysters.

Instructions

1. Visit your local seafood store and purchase the oysters of your choice. Inspect the oysters closely to check for any that may be opened; an opened shelled oyster usually means it it dead. You can test the oyster by tapping the shell to see if it will close. If not, remove the oyster from the batch.

2. Place the cooking pot on the stove and fill with water upwards of two-thirds full. Add roughly 1 to 3 tbsp. salt for every quart of water you are using to help it boil. Choose a pot that the oysters fit into snugly to ensure they all cook evenly.

3. Pour the oysters into the boiling water, cooking them roughly four to six minutes. Once all of the shells have opened, the oysters are done.

4. Pour the oysters into a colander and allow the water to drain. Shock the oysters in cold water to stop the cooking process.

5. Plate the oysters and serve with your favorite dipping sauce.
