Cook Red Potatoes In A Skillet







Red potatoes. . .boring? Maybe not. There's a lot you can do with those red balls of starch if you use a little imagination. Step out of the box and forget about mashed or boiled potatoes and add some variety to your menus. Start with a good basic skillet recipe for red potatoes and then branch out by adding ingredients that will turn them into a gastronomic delight. For skillet potatoes you don't even have to remove the skin, which not only adds to the flavor and color, but also keeps the natural health benefits of the vitamins and minerals contained in the skin.


Instructions


1. Scrub the potatoes under warm, but not hot, running water. Remember that since you will be cooking the potatoes with the skin on you need to get them exceptionally clean.


2. Dice an onion into quarter-inch size pieces.








3. Cut the potatoes into bite-sized chunks. If the potatoes are small, halving or quartering will be sufficient.


4. Heat four tablespoons of olive oil in the skillet until hot but not smoking. The oil is hot enough when a drop of water dropped on the surface will dance on the oil.


5. Place the onion into the hot oil and cook until just barely translucent. There is no need to cook the onion until completely done, as it will continue to cook when the potatoes are added.


6. Add the potatoes and cook for about 15 minutes or until they are cooked through. Stir every few minutes to insure that the potatoes cook evenly.


7. Add whatever seasoning you desire. A little bit of salt with some garlic powder and paprika make excellent seasonings for a basic skillet red potato recipe.
