Mozzarella is a soft, mild-tasting cheese that originated in Italy. It should be served as fresh as possible and therefore bought in small quantities. Leftovers should be stored in the refrigerator, and typically mozzarella is stored in water. If the water covering the cheese turns opaque, replace it with clean water.
Instructions
1. Wrap the leftover cheese tightly in plastic wrap. If the cheese was sold in a brine or liquid, place the cheese and liquid in a glass or ceramic bowl and wrap plastic over the top of the bowl. This will help to keep the cheese from drying out. The more the cheese dries out, the quicker its taste will deteriorate.
2. Place in the refrigerator for up to two days. Mozzarella cheese should be kept in a cheese drawer or a very cold part of the refrigerator
3. Remove cheese from the refrigerator and let it warm to room temperature before serving.
4. Wrap tightly in plastic and put it in the freezer rather than the refrigerator if you won't be able to use the mozzarella cheese in a few days. The taste will still deteriorate, but not to the same extent. When ready to serve, remove from the freezer and allow the cheese to thaw in the refrigerator. Frozen mozzarella cheese is best used in cooked foods, such as on pizza or pasta.
