Make Fresh Pork Sausage







Homemade pork sausage is simple to make if you have a meat grinder. Fresh pork sausage can be seasoned with the herbs and spices of your choice and can be stuffed into casings for links or used as patties.


Instructions


1. Set up your meat grinder according to manufacturers directions. Set a large pan under the output portion of the grinder.


2. Cut the roast away from the bone if it has one. Cut the meat into approximately one inch cubes.


3. Prepare your herb mixture in a separate bowl. Some favorites are sage, Italian herb blends and crushed red pepper. You will need about 2 tablespoons of herb and spice mixture for every pound of meat.


4. Load the hopper of your meat grinder with pork cubes. Turn the machine on if electric or begin cranking if manual to start the process. Use the provided plunger to push the meat to the grinding dies.


5. Use your hands to mix the spices into the ground meat making sure that the spices are distributed evenly.


6. Shape into patties if desired. If making links with casings, attach the casing to the funnel of the stuffer and feed the sausage into the hopper. As the casing fills, twist the casing at appropriate lengths for links.
