Feta Avocado Salad

Indulge in a feta and avocado salad instead of a traditional lettuce salad. Adding the fresh vegetables together creates a colorful salad arrangement that works well for the summer season. The salad has Greek origins, and contains nutritious ingredients that make it ideal for a healthy diet. Avocados contain monounsaturated fats, potassium and vitamin B. Once you finish making the avocado and feta salad, serve it with a side of fresh bread for a simple meal.








Instructions


1. Slice an avocado in half lengthwise around the large seed in the middle. Open the avocado and scoop the pit out with a spoon.


2. Cut both avocado halves into small segments by slicing an evenly spaced cross-hatch pattern. Avoid cutting though the peel when you slice the pattern into the avocado. You will cut evenly spaced lines that run horizontal and evenly spaced lines that run vertically to create small square segments.


3. Scoop the avocado pieces out into a mixing bowl with a spoon. Discard the avocado peel and pit.








4. Slice a ripe tomato into eight wedges. Slice a cucumber into 1/2-inch round slices. Place the vegetables into the mixing bowl with the avocado.


5. Add 1/3 lb. of crumbled feta cheese over the vegetables. Top with your preferred dressing if you desire, or drizzle olive oil over the prepared salad and add a pinch of salt and pepper.
