Mix Tabasco Sauce

The tabasco chili pepper originated in Mexico and has a Scoville Heat Index of 30,000 to 50,000 units, meaning it is extremely hot. To create a flavorful tabasco sauce in your own home, you will need a few basic ingredients and patience, as it takes an entire month to create tabasco sauce. When creating tabasco sauce, only use red tabasco peppers. Green, yellow and orange tabasco peppers are not fully ripened.


Instructions


1. Pour 2 cups of apple cider vinegar into a saucepan. Place on a stove-top burner and heat on medium-high.


2. Add approximately 1 lb of red tabasco chilies to the vinegar. Bring to a rolling boil. Boil for two minutes, stirring continuously.


3. Lower the heat and simmer for five minutes.


4. Add the vinegar and tabasco chiles to a food processor and puree until smooth. Pour the sauce into an air tight container and place in the refrigerator for two weeks.


5. Place a new air tight container on a flat surface, laying a piece of cheesecloth over it.








6. Pour the tabasco sauce over the cheesecloth. The cheesecloth will catch any thick pieces of chili pepper, leaving the sauce to flow into the new container. Throw the cheesecloth away and refrigerate the sauce for another two weeks before using.
