Chicken Diet Recipes

Versatile food


Chicken is one of the most versatile protein sources around, and an ideal addition to many diet meals. Low in fat and calories and relatively inexpensive, it's good hot or cold in any season. People short on time in the evening can cook it in a crock pot all day or make a quick stir-fry, and summers wouldn't be the same without salads and grilling.


Chicken stir-fry


Cube 2 boneless skinless chicken breasts, and stir-fry in a wok until thoroughly cooked through. Add 3 cups of chopped vegetables of your choice such as peppers, celery, onion or pea pods. Season to taste with soy sauce or teriyaki sauce, and cook until vegetables are tender but still crisp. Serve over brown or white rice.


Slow cooker Mexican chicken








Layer four boneless and skinless chicken breasts in a slow cooker, sprinkling each with low-sodium taco seasoning. Pour half a jar of your favorite salsa over the breasts, cover and cook on low 10-12 hours. Just before serving, stir in a half-cup of low-fat or fat-free sour cream and increase heat to high for 10 minutes to thicken. Serve breasts and sauce with Mexican rice or shredded on tortillas.


Chicken chef salad








Begin by using your favorite lettuce mixture or simply romaine leaves. Top with chopped red and green peppers, sliced cucumbers, cherry tomatoes, chopped cold chicken breast, walnuts and dried cherries. Serve this salad with crusty rolls.


Cherryake chicken skewers


Cube boneless skinless chicken breasts, green and red peppers, and onions. Slice 2 cups of either sweet or sour cherries into a zip-top bag. Add a quarter-cup of teriyaki sauce, a quarter-cup of olive oil and a cup of water. Add chicken cubes and zip the bag closed. Put the bag in the refrigerator for at least one hour to marinate. After marinating, alternate chicken chunks, peppers and onions on skewers and grill until cooked through. These skewers are tasty with rice or on flatbread in a sandwich.
