Make Gluten Free Vegan Bread

When you suffer from Celiac disease, you have a condition where gluten harms the small intestine's lining. This is because the balance of good and bad bacteria in the colon and small intestine is off--in fact, there are more bad bacteria present than good. Gluten disrupts this balance still further, which means that you need to avoid foods that contain gluten, such as rye, barley and wheat. Instructions


1. Stir a tablespoon each of active dry yeast and sugar and 1 1/2 cups of water in a small bowl. When the yeast begins to foam, let the bowl stand.








2. Combine the gluten free flour mix with the xanthan gum and salt in a second bowl. Mix these ingredients well.


3. Beat together the eggs, oil and apple cider vinegar with a whisk in a third bowl. Keep whisking until the eggs become foamy.


4. Add the yeast mixture and the egg mixture to the bowl containing the flour mixture. Stir these ingredients well until they are all wet.


5. Pour the entire mixture into the bread machine. Set the timer on the bread machine to bake for 80 minutes.
