Healthy Kosher Meals

Kosher food can be both tasty and healthy.


Choosing the right, healthy meal is important, even when keeping kosher. Whether you need a meal idea for Passover or an everyday kosher option, options abound. It is easy to make a healthy, kosher meal that includes an appetizer, soup, main course and dessert.


Appetizers


Choose a light starter, such as salmon or a salad. Take a cut of salmon and coat with chopped onion, salt and pepper to taste. Bake the fish in a 350 degree oven for about 35 minutes and serve on individual lettuce leaves. Or, make a Pesach Oriental Salad by combining cucumber, tomatoes, green bell pepper, celery, red onion, parsley, lemon juice, olive oil and cilantro. This salad is pareve.


Soups


After a light first course, serve soup for the second dish. An interesting kosher option is a squash apple bisque. This requires vegetable stock, tart apples, butternut squash, butter, half and half or cream, flour, rosemary and onion. A bisque contains milk so you cannot serve it with any meat dishes. You can serve it with a vegetarian option and the Pesach Oriental Salad appetizer.


If you do not want to do a vegetarian main course, you can make a turkey and chicken soup. Combine a turkey neck, chicken, carrots, onions, garlic, pepper, salt, onion powder, butternut squash and 5 quarts of water and bring it to a boil. Lower the heat and allow the soup to simmer for three hours.


Main Courses


For a healthy main course, chicken is a low-fat, low-calorie option as long as you remove the skin and don't smother it with a heavy sauce. Serve pan-seared chicken with clementine salsa, a simple meal that just requires navel oranges or clementines, boneless, skinless chicken breasts, olive oil, salt, pepper, red onion and tomato.


Another simple, but delicious, kosher chicken course is chicken with roasted vegetables. Cover a baking dish with a layer of carrots, mushrooms, canola oil, paprika, potatoes, onions, sweet potatoes and onion powder and top with a whole chicken, cut into sections. Bake, covered, for 1 1/2 hours at 375 degrees. Uncover it for the last 10 minutes of baking time.


Desserts








Kosher options for dessert include pears poached in red wine and barbecue peaches. Because the barbecue peaches are made with margarine and served with ice cream, they aren't suitable for meals containing any meat dishes. Other ingredients in this treat are brown sugar, kosher brandy, sherry or bourbon, and cinnamon.


For pears poached in red wine, you will need some of your favorite pears, sugar, cinnamon, an orange, red wine and cloves. Either option is a great finish to a healthy kosher meal.
