Chicken and Dumplings is one of my favorite comfort foods. While there are many recipes for it, this is one that has become my favorite. Hope you like it!
Instructions
1. Wash and rinse chicken pieces. Put in a large pot. Add water to cover chicken. Add salt, pepper, poultry seasoning, onion powder, and garlic salt and bring to a boil. Reduce heat to medium and cook until chicken is tender. Remove chicken and allow to cool enough to handle. Pull chicken from bone and shred with fingers. Add back to the broth.
2. In a large bowl, add flour, egg, buttermilk (enough to make it doughy like biscuits) and mix. Careful not to mix too much because it will make the dumplings chewy. Sprinkle flour onto cutting board. Take part of the dough and roll it out thinly. Cut into squares and drop one at a time into broth that is simmering. Continue with dough until you have used it all.
3. Simmer long enough to allow the broth to thicken. About 20 minutes or so.
