Instructions
1. Preheat your oven to 400 F.
2. Combine 2 lbs. of lean ground beef, 1/2 cup of rice or gluten-free multi-grain cracker crumbs, one egg, two cloves of minced garlic, 1/2 cup of chopped white onion, 1/4 cup of tomato paste and 3 tbsp. of gluten-free Worcestershire sauce in a mixing bowl. Mix in salt and ground black pepper to taste.
3. Place the meat mixture into a greased, 9-inch loaf pan. Mold the mixture with your hands to form an even loaf.
4. Pour the desired amount of ketchup over the top of the meatloaf and spread it evenly with a knife.
5. Bake the meatloaf for 50 minutes to one hour, or until it cooked all the way through and features a golden crust.
