Make Broccoli & Stilton Soup

Broccoli Stilton soup is a pre-dinner staple in the UK. Rich and delicious, it derives its distinct flavor from the addition of blue Stilton cheese to the creamy broth. Cheap, simple and tasty, this recipe makes a soup that can be offered as a mouth-watering appetizer but is hearty enough to be called the main course. If you find the find the flavor of Stilton unappealing, feel free to substitute a different cheese, adjusting the quantity to reflect your personal tastes.


Instructions


1. Heat the olive oil in a large stock pot over medium heat. Add garlic and onions and sauté for 2 to 3 minutes.








2. Add the potato and the butter. Stir gently, combining the potato with the onion and garlic, until the butter has completely melted.


3. Add the broccoli and the soup stock to the pot. Bring the mixture to a boil, and then reduce the heat to low. Cover the pot and allow the soup to simmer for 20 to 25 minutes, until the vegetables are soft, stirring occasionally.


4. Remove the pan from the heat. With a stick blender or hand mixer, process the soup until smooth.


5. Return the pan to the heat. Stir in the cream, the cheese and the spices. Mix over low heat until the cheese has melted. Adjust the seasonings to taste and serve hot.
