Make Pizza Soup

If you like pizza, you'll love pizza soup, especially when you serve it with garlic bread. It only takes a few minutes to prepare and it will soon become a family favorite.


Instructions


1. Empty the condensed tomato soup into a saucepan. Then fill the empty can with water and add it to the soup. Stir and bring to a boil and then reduce the heat to simmer.








2. Peel and dice the onion and chop up the green pepper. Be sure to discard the seeds and the white parts on the inside of the pepper. If you like mushrooms, slice them as well. Toss the onion, pepper, mushrooms (optional) and garlic into a saucepan in which you have already heated the olive oil. Stir lightly until the vegetables soften and begin to brown. Remove them from the heat.


3. Chop the pepperoni slices into small pieces. Add them and the prepared vegetables to the pizza soup. Bring it back to a boil and return to simmer, stirring occassionally. Add the oregano. Let the soup simmer for about 15 to 20 minutes.








4. About ten minutes before you are ready to serve pizza soup, mix in the shredded asiago and mozzerella cheeses. Stir constantly so that the cheese do not separate. Do not let the soup boil after the addition of the cheese. When all of the cheese has melted, the soup is ready.


5. Ladle the pizza soup into generous soup bowls. Serve with dried Parmesan cheese, garlic bread and a green salad for a delicious meal.
